Quick, Healthy Meals for Hectic Weeknights
You know how it goes. It’s 3pm, kids are heading home from school and you have a night full of kid activities ahead of you including homework. What’s for dinner? You know it has to be a quick meal, but you promised yourself last week that you wouldn’t go through the drive through because you remember how your kids acted after eating that stuff. So what are you going to do? Your 10 year old child with ADHD and ODD has homework and you only have a small time window to get something nutritious in the kids. Studies show that kids with ADHD need protein and complex carbs. So here are some ideas for you:
- Healthy Pizza – Simple Mills Pizza Dough, topped with sauce, chicken, veggies, mozzarella cheese or goat milk cheese. Serve with fruit.
- Crock Pot Beef Stew – Put a bottom round roast, carrots, potatoes and celery in the crock pot and add 2 cups of beef bone broth and cook for 8 hours on low.
- Chicken Stir Fry – Stir fry chicken tender pieces in 1 TBSP Avocado oil, add frozen organic stir fry veggies and then add coconut aminos. Cook until no longer pink. Serve with brown rice or quinoa.
Plan ahead by ordering your groceries online to avoid last minute runs to the store. This way you can avoid the arguments and meltdowns and enjoy the soccer game 🙂
Remember to pack some nutritious snacks if you will be gone for awhile. How about some almonds and apples slices or a handful of pumpkin seeds? Planning is definitely the key to keeping your sanity and keeping your kids grounded and on task.
